Starting a new business on top of being a mother and wife can be very overwhelming and busy! I find myself with little time to plan meals. My new best friend has been the Crock Pot! With a few ingredients, and just a little bit of planning the night ahead, you can have a healthy, home-cooked meal for your family.
- 1-2 lbs of Chicken, depending on size of pot, always check your local market for sales
4-5 medium Potatoes, peeled and quartered
3-4 Carrots, peeled and sliced
1 medium Onion, diced
3-4 leaves of thoroughly washed Kale, can substitute any greens like turnip or parsley
8 Chicken Bouillon Cubes or 8 cups of Chicken Broth, depending on size of pot and whichever you prefer
2-3 Bay Leaves
3 tbsp Pepper
3 tsp Salt
Before you go to bed, wash and clean your chicken thoroughly. Place your chicken on the bottom of the crock pot. Fill with water to cover chicken. Set on Low and the chicken should be ready in the morning or 8 Hours. In the morning, get your Potatoes, Carrots, Onion ready for the crock pot. Drain your cooked chicken and save some of the broth. Place your Potatoes, Carrots and diced onion in your crock pot. Cover in about 8 cups of Chicken Broth. (If you use Bouillon Cubes, just add 8 cups of Water over your Vegetables and then your 8 Bouillon Cubes). Add your Salt, Pepper and Bay Leaves and set your crock pot to Low for 8 hours or if soup is for lunch set on High for 4 hours. The last hour add your whole Kale leaves, cooked chicken, and the chicken broth you set aside. By lunch or dinner, you should have a hearty and healthy soup you can enjoy with your family. Add crusty bread to your soup and you have a full meal.
