There are so many things you can do with my very favorite food: Pasta!
When your a mom of two and taking care of 3 more kids, pasta is a great staple you can have in your household. I call this the "two for one" because you have one great staple like pasta you make ahead of time and you can create two or even more dishes out of it. Its great for all you budgeters out there as well!
Make your Pasta ahead of time or when your ready to make your first pasta dish. You'll need about 2-3 lbs of Macaroni or whatever you have on hand (you can even combine different shapes, kids love that!) Take half for your first dish. Let the other half cool down and store in your fridge for the second dish.
Italian Pasta Salad1-1 1/2 lbs of cooked Pasta
1 lb of Ham, cubed (or your favorite protein, Pepperoni slices work well)
1 can of Black Olives, sliced
1 can of Sweet corn
1 block of Colby Jack Cheese, cubed (or your favorite cheese)
1/2 bottle of Fat-Free Italian Parmesan Dressing
Pour 1/2 of your Fat-Free Italian Parmesan Dressing in a mixing bowl. Combine your cooked Pasta and cubed Ham in mixing bowl to coat ingredients. Combine your sliced Black Olives, Sweet Corn and rest of Parmesan Dressing. Let mixture cool down. Add cubed Colby Jack Cheese. Mix to coat all ingredients and your ready to serve!
I made this the next day with the rest of my pasta since I really dislike to waste food!
Tuna Casserole1-1 1/2 lbs of cooked Pasta
2 cans of cooked Tuna in water, drained
1 can of condensed Cream of Mushroom Soup
1 can of condensed Cream of Chicken Soup
1 cup of 1% Milk (if Lactose intolerant use water)
2 cups of shredded Colby Jack Cheese (or your favorite cheese)
To make my base creamy I usually blend the Cream of Mushroom Soup, Cream of Chicken Soup and Milk in my Magic Bullet. You can also used a blender or just a good old-fashioned mixing bowl and whisk. Pour half of blended base in your casserole dish. Layer your cooked Pasta on top. Layer your drained Tuna on top of your Pasta. Pour rest of blended base on top of everything. Sprinkle all your shredded Colby Jack Cheese on the top. Set your oven to 350 degrees and cook for about 20 minutes or until your Cheese is a nice golden brown and your creamy base is nice and bubbling. Let cool and serve!
