Food On The Fly: Chicken & Rice

Many times I won’t know what I am cooking or even planning to cook until I have two or more whiny children telling me “I am hungry!” My go-to dishes are usually something involving pasta or rice since they are very simple and quick to cook.

Recently I had my two children plus three extra kids that I watch, all looking at me with those puppy dog eyes and whining “I am hungry, can you make me something to eat...” soon as we got home from me picking them up from various places.

This is what I came up with:
    2 1/2 cups of Rice
    3 tsps of Butter
    3 cups of Chicken Broth
    1 can ready-cooked Chicken
    1 can of Peas
    1 can of Mushrooms
In a large pan melt the Butter. Once Butter is liquified pour the Rice and let sit until its nice and golden brown. Stir your toasted Rice and pour in about 1 1/2 cups of Chicken Broth. Lower down heat and cover mixture so the Chicken Broth can “plump up” the Rice. Give the mixture about 5-8 minutes. When Rice looks “plumped up” add the rest of the Chicken Broth, the ready-cooked Chicken, Peas, and Mushrooms. Bump up the heat a few notches and your Rice dish should be ready in about 3-4 minutes.
