Delicious Desserts Minus the Oven

You have Fourth of July festivities coming up and need to make a dessert. Yet, you know the warm weather can bring costly electric bills from using the air conditioner. You do not want to increase the costs by using the oven to bake a dessert. It is time to go the no bake route.

If you have scoured Pinterest for no bake desserts you will probably find varieties of red, white, and blue parfaits and no bake cheesecakes, which are good but rather common. Therefore, I want to share you with some other no bake desserts that aren't seen as often.

If you have not heard of Pretzel Chex Mix Bars, itís time you do. These bars are yummy, crunchy, gooey, peanut-buttery, and chocked full of M&Mís. They are quick to make with few ingredients and no oven required. It is a recipe I learned from a good friend (who puts my baking to shame). You can make this dessert for pretty much any occasion. You can even make them more festive by changing the color of the M&Mís. For example, pastel M&Mís for Easter, pink M&Mís for a girlís birthday, and regular colored for a potluck. For this occasion of course you can put red, white, and blue M&Mís in them.

Recipe for Pretzel Chex Mix Bars:

  • 1 Ĺ cups M&Mís
  • 1/3 cup creamy peanut butter
  • Ĺ cup butter
  • 5 cups mini marshmallows
  • 2 cups corn Chex cereal
  • 2 Ĺ cups pretzel sticks (break in half)

Directions: In a bowl combine the pretzels and cereal. In a large saucepan over heat melt butter and peanut butter. Add marshmallows into the saucepan; cook and stir until marshmallows are melted and mixture is smooth. Pour mixture over pretzel and cereal combination; stir to coat then quickly stir in M&Mís. Then you can choose to eat it, while it is still gooey right out of the bowl or you can serve them.

If you choose the latter, put the mixture into a greased 13 x 9 baking pan. Press and smooth out with the spatula. Then let cool until firm and cut into squares. You can serve them out of the pan, but I like to put them into cupcake liners to make them prettier and easier to grab. The recipe makes about two dozen bars depending on how you cut them.
