anybody know if a vga to scsi adapter/cable exist to connect a unix server to a regular vga monitor? not much luck on google.

Simple answer.
No.

Not so simple answer.
SCSI is for transferring data such as Hard drives.
They are not compatible in that sense.

Analogy
That's like trying to put headlights on the wheels. It just doesn't work.

Are you sure the Unix server video output is SCSI? That just sounds wrong.

if you're trying to hook up an old style sun card, you need a 13W3 to HD15 connector. There's millions of them on eBay
