Is there any way to check store stock online (to figure out whether it's worth going to the store to check on the Zeal in the morning)? Also, is it likely to come back in to stock online later in the week if it is indeed sold out now (and not just the weird temporary behavior)?

OfficeMax.com generally does not re-stock bonus rewards items.

In case this info helps anyone, I was able to order the Zeal over the phone, but I don't know how confident to be about actually getting it. The order number I got isn't showing up in the order tracking tool but I also just placed it.

I was able to get the glee mid back easy enough in MA.One of the first chairs I bought for myself was one of those cheap office store chairs, and it was fine for a while. After about a year, the cushioning is all but gone and after about a year and a half the plastic arms that are all that support the back, broke. It's hard to beat $10 for a chair, even a temporary chair, but considering how much time you can spend in one over months and even years, I'd really suggested looking for a better chair, even if it cost you $100+ or more.
Right now I'm sitting in a Steelcase Leap chair that I bought for $30 from a donation/resale shop (had to fix it up a little). Before this my previous chairs were a Steelcase Sensor and Herman Miller Equa 2, all for $5-$15 from donation stores and each would have cost $500+ new. I'm not saying it's easy to get a good chair for cheap, it takes time and regular weekly trips to good donation stores in your area, but in the end you can have an hand-me-down chair that's many times better than what you can get from an office store, and at a fraction of the price.

I didn’t have my MaxPerks ID Card available when I purchased a Bonus Reward item(s). Can I make an adjustment to the Bonus Reward dollar amount in my account? No. The only way for you to earn Bonus Reward(s) is if you present your MaxPerks ID Card at the time of purchase. However, you can earn credit for the qualified purchase dollar amount. Simply log in to your account to add your receipt information on the “My Rewards” page by clicking the Add a Receipt button.

That doesn't help with taking both the Staples 25/75 q and max perks card.

I'm not expecting a great chair. This box goes in the basement. When the chair I'm currently using breaks, then I use this one as a replacement till I find a better one. Without a backup I would be forced to buy something overpriced quickly.

To roll rewards of course requires having rewards to roll so all you have to do is wait for the rewards from this purchase to be issued sometime in June (usually the latter half of the month).
The rewards are generally noted on the account within several days of purchase (in-store) or shipment (online/phone) but are not issued until the following month.

The backorder status at this point generally means the item is shipping from a warehouse other than the warehouse for your region.
EDIT: My phone order, which has shipped, has not even been noted on my OfficeMax.com account yet. No transaction info on my rewards acct either but that is to be expected.

It appears that MaxPerks is double counting the 20% part of this hybrid offer for the Wednesday (Breckland, Oddessa) and Thursday (Fausto, Crawley) chairs but not the Sunday chairs (Glee, Zeal). Actually MaxPerks is fixed valuing the entire reward and then adding another 20% on top (with the percentage part of the award being impacted by coupons) for the Wednesday and Thursday chairs.
Example A: Breckland chair purchased without a coupon:
Advertised as: "Breckland High Back Executive Chair (item# 23175261) $79.99, receive $70 ... already includes 20% Bonus Reward." To get to the $70 it would be 20% of $80 = $16 plus $54 fixed.
A poster in the Breckland thread on SD was awarded $86 in rewards per chair.
To get to the $86 per chair: $70 ... fixed $16 ... 20 percent back ---- $86
Example B: Breckland chair purchased with $15 off coupon:
My Breckland chair was awarded $83 in rewards but then I used a $15 off coupon. Only the chair in the order. So the calculation is: $70 ... fixed $16 ... 20 percent back -$3 ... (.2 x 15) (amount of coupon allocated to the chairs at the percent of the offer (15 x 20%) ---- $83
Example C: two Crawley chairs purchased with a $20 off coupon and $6.19 in filler:
My Crawley chairs were awarded $120.20 or $60.10 per chair. I purchased two with a $20 off coupon and $6.19 in filler.
The $50 should be allocated $12 twenty percent back (.2 x $60) and $38 fixed. But:
$50 ... fixed $12 ... 20 percent back -$1.90 ... (.2 x amount of coupon for the chair)** ---- $60.10 x 2 = $120.20
** - (59.99+59.99)/(59.99+59.99+6.19) x 20 x .2 = 3.80
