I don't understand why they say "heat stable" when they also say "The smoke point is 260 degrees F." Also, it is insane saying it is a subsitute for olive oil in any way. However, they list using it to pop popcorn, and in that use, it is awesome.

coconut oil can be a great sub for olive oil. olive oil smokes and breaks down at a lower temperature than coconut oil. that's not good for your food or your health. just last night i cooked some tuna with coconut oil. i turned my burner all the way up to get the oil really hot which allowed me to get a good sear on it without over cooking it. if i had tried that with olive oil all i would have gotten would be kitchen full of smoke.

i've seen that chart before and i think it's bs. i think it tracks back to the olive oil council. here's what i do know. in my kitchen using the same stove, same pan, same temp, quality evoo smokes and evco doesn't. i use evoo plenty but when i need high heat i always reach for the evco.
