Chef's Choice is the only brand with decent enough quality I have a Chef's Choice and it works incredibly well. I know the Chef's Choice has diamond sharpening disks and the Smith's uses ceramic. Not sure how they compare though.

Japanese knives are sharpened at 15-17 degrees. European/western knives are sharpened at 17-20 degrees. The specs they post says that the sharpening angle is 35 degrees. If you want to use your knife to crush your food use this sharpener.
