TYOP. Sorry for the rant that follows: I like raw almonds, but now Almonds must be pasteurized and can still be labeled raw. Gives me another reason to dislike politicians. If they focused on proper handling of food, food would not need to be "cooked" before distributing. Just like all the recent salmonella scares - if people handled spinach, etc. properly, these problems would not occur. But instead of addressing proper handling, they slap a generic band aid on the situation and let it go - until the next issue when more people die. edit: For more information, read their (Almond Board's) own article here. "To date, FDA has approved oil roasting, dry roasting, blanching, steam processing and propylene oxide(PPO) processes as acceptable forms of pasteurization for almonds."

Before someone else keeps RANTING ENDLESSLY about this... The spinach, lettuce and green onion scares (IIRC) were caused by the use for irrigating of water from wells that cointained f****s (full of bad bacteria). The State of California, unlike Puerto Rico, didn't regulated the use of well water (in PR you can't dig any well w/o a permit {certifying that the well water is safe for the intended use] from the Government [PR Aqueduct and Sewer Authority or PRASA in this case...]). No matter how much you cooked the leaves bad bacteria would live 'cause it was imbedded inside those leaves.
So, not always the proper handling of the food stuffs would reduce / eliminate the need to pasteurize... Sometimes is in the care of growing the food itself on the farm. Wonder if still California doesn't require that you prove that the water for growing food is safe to use...
