I don't see how the wrenches in the picture can "ratchet"...

You need to research them in store and also think abotu 'how' an open ended wrench can ratchet.
The mechanism on the open-end ones is just a little black tab on one face of the inside of the head. It springs back inside when you go backwards. I do not believe it's reversible though like a regular ratchet, you have to flip the wrench over to reverse.
