You bring up a valid point. Not with modern stainless steel cutlery. With real silver cutlery, possibly.
Presumably they are referring to processing extremely acidic food with carbon steel knives, which could conceivably leave a metallic taste. The steel would have to remain in contact with the food for far longer than normal cutting-up to release enough iron to be perceptible in a food that acidic.
