Good deal, however this is a Stainless Steel Knife = Difficult to sharpen. Personally if you are going to spend this munch on a knife you might as well go full tilt and get the Shun Classic for another $75, you will be much happier.
For those of you not familiar with Shun knives, Shun makes very good quality knives (and way cooler looking) that are only slightly more expensive then Henckles and Wustoff.
I thought the biggest difference between the classic and stainless line was the handles? As for sharpening, KAI will sharpen the knives for free for the life of the knife (you pay shipping to them)

Err what are you talking about, the stainless refers to the handle. It's the same clad construction as the classic.

What's the lowest this knife has been on Amazon.. I seem to recall maybe $79.99 or something?

You probably got the Santoku the same time as me. We're replacing a set of Henckels that I thought were great a few years ago. Surprised what a huge difference they are. I think the 8" chef is also on sale, peep another fw post
