Acer Aspire Easystore AH340-UA230N Intel Atom 1.6Ghz 2GB 1TB GBLAN 4 Bay Hotswap Windows Home Server $320 @ Fry's B&M and online
Probably the best price I've seen without CashBack/rebates. Price is same both B&M and online. Although, tax will probably kill B&M deal and shipping will probably kill online deal.
Hopefully this will be under $300 on Black Friday.

I don't see why not. Being a WHS box, it probably doesn't have any video-out capability (like my HP WHS), so make sure your linux distro offers a headless install.

Is there something I'm missing...?No, I don't think your missing anything, but I think AbbaZabba is missing an understanding of the difference between WHS and a NAS.
(Added)Although, some of the Thecus boxes can be hacked to add WHS, if you want to, but that adds the cost of a copy of WHS
