I often make fairly large pot roasts with the vegetables cooked in with the meat so for me the 7-quart is the right size. Also, when I make stews or chili, I make large quantities.
OTOH, if you cook smaller batches, then the 5 quart might be better for you, especially if you have limited storage space, although the space required for a 7-quart over a 5-quart it not that much greater.
Just remember, you can cook a 5 quart batch in a 7-quart oven, but not the other way around!

Also I actually use this more as a fry pan. It has a 12" diameter bottom for good browning surface area and with it high side there is far less to clean up.
