Just got back from the country-style buffet in the next town over. My coworker friend took me and it was yummy! I had a couple pieces of fried catfish, a chicken leg, some yellow hominy (been a long time since I saw THAT on a buffet), some steamed vegetables and cherry cobbler with soft-serve ice cream. Oh, and sweet tea. I don't eat like that much, but it was yummy!
12" turkey on wheat with green peppers, pickles, and honey mustard from the on-campus cafeteria - and a diet Amp.
I'm at work - I had an app I needed to deploy, and about 7 macs and a pc I need to set up, so I'm going to be working late tonight... and probably tomorrow. Ahh, sweet OT.

But it was SUPER YUM fried chicken. Tried a new method that I saw Ina Garten do on TV and OMG it was good!!!! I don't think I've ever had fried chicken that moist. Soaked chicken pieces in buttermilk for 24 hours. Drained, seasoned, dredged in flour. It started out frying in hot oil (360) for 3 min. per side but then finished on a rack on a baking sheet in a 350 degree oven for approx. 35-40 min. I didn't care for Ina's seasonings so I did my own (paprika, kosher salt,garlic powder and cayenne pepper) and got a bit carried away on the salt, but that was my fault. Will adjust next time. It's the only way I'll make it in the future.
Finished out the meal with mashed potatoes, corn, peas and biscuits for DH and DD (DS and I rarely eat them).
mixed spring greens, avocado pieces, sliced mushrooms, green olives, and chopped tomato mixed w/ a tablespoon of hellman's as the dressing. of course, i also added a bit of sea salt and some freshly ground pepper.

One of my favorites, beef stew, Even ate a couple of carrots. Trying to get our daughter to eat veggies and wife told me I have to start eating some so she can;t keep using that as an excuse. They were yucky and I gagged a little

i love cooked carrots. that is what i miss most about cooking a roast. carrots and potatoes are both good when cooked w/ roast.
we went to fresh market and picked up baby swiss, french brie, french bread, red pepper jelly and we had the wine chilled at home! Had eggrolls for dinner too i love wine and cheese night!
