Actually there is such a thing as an 8 seater. They are not available everywhere tho. Nor will they be cheap.
OP might want to consider two smaller cars.

Toyota Siennas are listed (Alamo) as 8 passenger. Some rental companies (including Budget) offer a "full-size van" option, listed as 12-passenger. Both are listed as available for the rental period, but are very expensive ($8xx-$12xx).
I agree with the suggestion to consider two vehicles. You could rent two small cars and probably save quite a bit.
This topic is a good reminder that rental car rates generally do not drop as you get closer to your rental dates--IMHO you almost always get the best rates several weeks/months in advance, other than periodic "last-minute specials."
