Paris-born chef Alain Vincey carefully crafts each meal, drawing on kitchen experience at New York’s Lutece Hotel as well as in Bermuda, Monaco, and the West Indies. He first serves diners a sweet and savory petit four, after which a lobster bisque preps palates for a choice of two entrees: rack of lamb provençal or beef tenderloin with green-pepper-cognac crème demi-glace sauce. Crème brûlée completes the meal.
