A Rising Star
After landing a job as a salad maker at one of the area's most celebrated tapas restaurants, Nicolas Guardado climbed steadily through the ranks to become head chef. In 2007, he opened this family-style restaurant with his wife to bring his own vision of Latin American cuisine to Bethesda residents. The no-frills atmosphere in the exposed-brick dining room gives Guardado's food room to shine, and the dishes have commanded attention from reviewers:
"In general, the tapas are the prize here. Those croquetas are direly addictive, resembling crisp tater tots but far more silken inside, filled with a béchamel sauce infused with ground chicken and just a scent of Spanish ham." -- Eve Zibart, The Washington Post
"Guardado's kitchen knows its stuff. All our tapas, arriving in twos and threes, are admirable... we choose to kick it up a notch with chorizo (Spanish sausage), chopped tomato and thyme accenting the shrimp." -- Bernice August, Gazette.net
