The reason I didn't previously purchase a Mac was because I was worried about switching to a new operating system. My OS experience has been limited to Windows products. I didn't want to purchase a Mac and have to learn how to work it/not like this new OS layout.

  I remember when I first bought a Mac Air about 2 years ago. I had the same worries.  I couldn't be happier now.  The startup and shutdown takes seconds not minutes the windows OS.  With so many videos and tips on youtube on mac tips and tricks I don't think I will ever go back to owning a windows computer again.  At work at have to deal with windows 10 and I hate it!

Minutes for Windows to start up must mean computer is using a hard disk drive instead of an SSD. Or it's an older PC, older version of Windows, or Windows installation is messed up.

While my MacBook Air starts up faster than my Win 10 Dell laptop with an SSD, the Dell doesn't take minuteS to start up or shut down. From the moment I press the power button to getting to the desktop, I'd say it takes 40-50 seconds max. All the start up programs are what slows it down.
