For 8 total channels, 4@720P and 4@1080P, DVR, night vision, indoor/outdoor housings, remote monitoring, etc.  I can't see how an IP camera even compares with this setup in price or performance.

You can certainly buy IP camera packages with multiple cameras, NVR, remote monitoring etc..., although I agree I don't know of any with 8 cameras at this price.

Here's an example, albeit almost 3x the price of  the OPs deal

  Sorry, but modern multi camera systems most certainly do use IP, POE cameras with NVR recorders.
I am not sure where you got the idea that they are not.

The above system is designed for someone who wants to re-use their existing coaxial cable and not run new Ethernet cable.
While it does work, there is a quality sacrifice that must be made to do so.
