Does anyone still use an electric skillet? Those were common when I was a kid, but not so much anymore...

Electric skillets can be very useful in several situations:
During a kitchen remodel
Cooking outside of the RV or on the shady patio in the summer so you don't heat up the inside space
When guests are coming the next day and you don't want to have to clean the stove after cooking dinner

Also, nothing beats electric skillets for making a lot of pancakes!

  Perfect for potato pancakes / latkes. 12x12 is  a nice for just a couple of people.
I agree a griddle is better for pancakes, but if you don't have a lot of room to store appliances, a skillet is more flexible (can cook everything a griddle can, plus more).
