Seems like a good price.
I was lucky enough to get the $299 deal on Amazon a couple of weeks ago, and picked up Zelda & Mario games for $100 total.

I honestly don't understand why there's such a rapid shortage and huge demand. I'm sure it's a fun system w/ the available and upcoming games, but how does it justify the rapidity of exhausted stock?

It has nothing to do with global shortage. Its a bunch of idiots trying to resell and buying all the stock. There are about 900 consoles for sale on Amazon right now at about $380 and 9,274 listings for nintendo switches on eBay right now. The first picture on eBay right now is a guy with 11 switches.

The 32Gb memory chip in the Switch is the same one Apple is using in it's iPhone.†The memory chip manufacture cannot keep up with both Nintendo and Apple. That is why Nintendo cannot build them fast enough.
