Chicken Noodle Soup
Prep Time: †30 minutes
Cook Time: 1 hour

2 stalks of celery, finely chopped
2 carrots, finely chopped
1 small-medium yellow onion, diced
~1 tsp of poultry seasoning
Chicken Stock (128 oz)
1 rotisserie chicken roughly chopped or pulled
1 sprig of rosemary
1 sprig of thyme
Kosher salt
Fresh ground black pepper
8 oz of wide egg noodles

Warm 1-2 TBS of oil in a stock pot over medium heat and add celery, carrot, onion, salt, and pepper.† Sweat, but donít brown, the aromatics (~5-10 min).
Add the chicken and warm through (~5 min)
Add the stock, rosemary, thyme, and poultry seasoning and bring to a good boil (If you have a tea ball infuser or some cheesecloth, use that for the herbs.† Picking the rosemary and thyme leaves out is a pain.)
Add the egg noodles, stir, cover, and return to boiling for 20 minutes.
Reduce heat and simmer for about 30 minutes. If the volume gets too low, add a little canned chicken broth.

This recipe makes a little over a gallon of soup. †If you won't eat that much at once, it freezes well. †Here's a tip, though, the noodles won't freeze well. †Separate the broth into portions, freeze what you won't eat, and add noodles to the portion that you will eat today.†

It's been much less now that about 75% of the building works from home two days out of Tuesday/Wednesday/Thursday.. and thanks to laptops many people work from home when sick.
ETA: Yes.. work from home sick. You know.. deadlines and creating those reports upper management asks for today that they wanted yesterday.

Tamiflu if it's early enough in the illness.
Breathe Right strips to prevent suffocation from nasal congestion.
